We are three young Italian buddies who opened Gelato-Go on sunny 458 Ocean Drive, South Beach, on January the 18th 2013. We make our own Gelato base daily with fresh ingredients and sell it in cones, cups and takeout tubs. Our dairy flavors use low-fat milk with cream and no butters, while their Sorbetto is made with seasonal fruit. Gelato maker Antonio is from Caserta near Naples and learned the skill from his father, in the Gelato business for over 80 years. His childhood friend Domenico manages the finances, and high school pal Alessandro does the marketing. Gelato-go Healthy Italian Gelato, differently from any other ice cream or gelato, doesn't need a stabilizing industrial base and uses only natural fats (milk and whipped cream) and fresh fruit. Though lower in fat, with no more than 6-7% fat, Gelato-go has much more flavor than traditional ice cream (15-18% fat), using full flavored seasonal products, maximizing the essence of the main ingredients. Gelato-go does not melt quickly, especially if it is extremely hot outside, because it doesn't contain hydrogenated vegetable fats. In order to produce the healthiest and lighter product, we only use a set of Carpigiani machines, which is the number one brand in the market. From the whole fish imported from the Aegean Sea, to the Kalamata olives flown in from the Pyliotis family's own olive groves in Kalamata, nearly all ingredients are imported from Greece.
Poseidon is real a window to Greece in South Beach, an authentic culinary journey to Greece. Chef Demetrios Pyliotis is the first to import actual pure masticha (gum) from Skinos trees of the island of Chios-Greece and use it in cooking. Masticha lobster bisque soup. Also the only chef who prepares the whole fish on the grill without any cuts and cook to perfection. In addition, Demetrios has the technique to make the most tender grilled Mediteranean octopus.
