Internationally-known for slow-cooked pork shoulders over hot, Hickory coals, 18 barbecue restaurants in the small town of Lexington are indeed an attraction for folks passing through town, travel writers and food editors. The typical cuisine is sliced or chopped pork, barbeque slaw (tomato-vinegar base dressing - no mayonnaise), hush puppies and sweet tea.
